Chicken salad in pita bread  
Cut up some chicken breast into strips. Heat up 1tsp of coconut oil in a nonstick pan. Add the strips and turn frequently to cook all sides. Add some salt and black pepper. Keep stirring. Turn down heat, add a bit of water and cover. Allow to cook through then turn the heat up to semi dry the strips.
For the salad I had soft lettuce, grated carrot, some cucumber and red+ yellow bell peppers. Cut your pita bread in half and fill it up. 
Pack and enjoy
