You haven’t truly tested your patience until you’ve caramelized onions 😬 But those extra 45 minutes are SO worth it for this sweet potato crust quiche with roasted brussels and rich, flavorful caramelized onions. This might be the best thing I’ve ever made and I am so pumped it’s on repeat for breakfast on Week 3 of @whole30 🍳🍴Recipe here 👉🏻 Slice a sweet potato into half moons and line them on the bottom and along the sides of a casserole dish spread with Ghee (it’s okay if they overlap!) Place in 400°F oven for 25 minutes. In the meantime, get started on the onions. Heat a pan on the stove with 2 tbsp. Ghee or olive oil. Add the onion, keeping on low heat and occasionally stirring until onion is brown and caramelized (will take about 45 minutes, so you can move on to the next step while keeping an eye on them!) Chop 2 large handfuls of Brussels sprouts in half and place on baking sheet. Drizzle with olive oil and salt and pepper and roast in oven for 15 minutes. Remove the sweet potato crust from the oven and let cool. Whisk together 8-10 eggs with 1/4 cup nutritional yeast, salt, and pepper. When brussels and onions are ready, add them to the sweet potato crust then top with egg mixture. Place back in oven for 25 minutes or until eggs are cooked though and crust is crispy! Super easy to grab a slice to go in the morning and warm up at work 😋
